We all love corn and I'm sure we ate our share of fresh corn. We boiled the corn, bruch melted butter and season with salt. But have you ever tried Mexican corn? You might have seen it on one of the food channels but I created my own version. Yes, corn season is winding down but you might get some good deals. What you'll need is equal portions of sour cream and mayonnaise, chili powder, lime or lemon juice and I use Parmesan cheese.
Now, you may want to grill the corn which brings out the sweetness of the corn.
Spread the combined sour cream and mayo, add parmesan cheese, chili powder and squeeze a lime and you just made Mexican corn. I love it, so many different flavors but remember you can use varieties of what I offered but I believe its so delicious and most of all easy and simple.
