Chicken Feet & Oxtail
The cold weather is here, time for some soup? What can I make? Well, in the stores they have all sorts of canned soup. Varieties of boxed broths and some made with bone is fairly new. The bone marrow if they use it offers a healthier choice by lubricating your joints. To be honest, I would venture a guess that they just do it for marketing purposes.
But if your adventurous and trust Chef Woo Can, use chicken feet to make a healthy chicken stock that is natural and great for your joints. Wash the feet and Oh, by the way, clip their nails first, then low simmer for a couple of hours. Add salt and or sugar to taste. The chicken feet will fall apart and when this happens, your broth is ready. Allow to cool. When its cool, you'll notice that the broth has a gelatinous texture. This is perfect!. This is a perfect broth. Choose your amount, add chicken carrots celery and thyme and gelatin and allow to simmer. The gelatin is the collagen generated and you know about collagen for the skin right> It also is the lubricant for your joints too!
The price of oxtail has risen steadily due to its new popularity. But fortunately, retailers are selling them in small quantities.
Wash oxtail, slow simmer and par boil to get rid of the scum floating on top. Wash thoroughly. Now empty boiled water and fill up fresh water. Low simmer oxtail for 3-4 hours until oxtail is tender where meat falls off. Add salt or soy sauce and this oxtail you can take out and add some ketchup and hot sauce and enjoy the oxtail meat on the bone. Makes an excellent beef broth, very rich and hardy!. By the way, its not really oxtail but the tail of the cow!
Cooking your own broth avoids the problem with canning and all the artificial components used in the process of canning that might be hazardous to your health.
