Everyone wonders what the secret of Asian Cooking.
Asia people worship eating fresh food everyday. To the point that the elders go shopping everyday. The idea of buying fresh and freezing it, doesn't register. Maybe the younger generation freezes their food because they don't agree with shopping fresh each day.
They take pride in their cooking from aroma (smell), taste and appearance (appetizing). Every dish prepared is considered a work of art.
There is a balance between flavors. Using soy sauce, there must be a sweetness in sugar, spicy there must be a sour. Crispy, fried is always delicious.
There's always been a balance in all Asian cooking. However, since Asian food in America came into being, that formula has slowly disappeared. Crispy vegetables add a different dimension to any dish. That crunch is a sign of freshness.
Years and years ago, chefs used to pour vegetable or salad oil over the dish they made to give it a glistening effect.
Simple sauces don't over power a dish. As a matter of fact, a little sauce brings out the flavor of the meats or vegetables. Today American cuisine is over salted or over sweetness.
Anyway, going back to basics is the right way to enjoy a good meal.
