Aah Ramen Noodles!
Ramen noodles, the quick fix in college for breakfast lunch and dinner. Just add hot water, cover with the lid and in 2 minutes you have an instant meal. It become one of the most popular easy noodle dishes in America. Then we have Korean Ramen noodles, spicier version then there are the Thai Noodles along with Chinese and Japanese noodles. The flavor packet was the flavor enhancer. Spicy, mixed flavors ranging from chicken, duck, beef, curry sauces. I buffet of varieties.
Now, Ramen noodle restaurants have popped up all over now. In the Chinatowns, there is wonton noodle that is prepared in front of the restaurant with fresh roasted duck, fried pork bellies, fresh vegetables and the broth is delicious.
Are you busy? Hmmm, taking care of your new born bablies, or taking the kids here and there, budgets kind of tight, busy bysy busy.
The quick fix is get a ramen instant noodle.
Well, let Chef Woo Can jazz it up. Ingredients are readily available. Now, thee are 3 types of ramen containers at the supermarket. One is the cup of noodle soup, then there is the bowl of noodles inherently with Korean ramen noodles and the last one is the individual packets of noodles that must be cooked in a pan with water.
Depending on your appetite, its your choice.
Ok, ingredients. I am a seafood lover, so I would buy frozen shrimp, or if a beef lover, if you barbeques or grilled steak and have leftover, just slice it thinner. Chicken is always a favorite, any left over chicken, just slice it thin. Now, veggies, you can slice up some onions, onions give a sweetness or scallion, some taste and carrots slice thinly. Mushrooms, why not, fresh crushed garlic or garlic powder is fine. sesame oil is always good. Pepper for added spice why not or even a couple of pieces of lettuce.
What you created is a delicious healthy meal. You might just have to get a bigger bowl to accommodate all the goodies.
But, always remember, moderation is very important. Ramen noodles is basically fried noodles softened up by hot water. But on occasion its a great meal.

Gluten Free Hoisin Sauce
I admit that I lag in this area of Gluten free products. The first ingredient sauce that I will using is Gluten Free Hoisin Sauce. It's interesting as Hoisin sauce which represents sweet is paired with salty Oyster Sauce.
I found this recipe for Gluten Free Hoisin Sauce:
1/4 cup light soy sauce
2 tablespoon natural peanut butter
1 tablespoon honey
2 teaspoon rice vinegar
2 teaspoon sesame oil
1 clove garlic grated
1/3 teaspoon of black pepper
1/2 teaspoon of Korean chili paste
1/4 teaspoon 5 spice powder
1/4teaspoon of 5 spice powder

Milennial Sriracha Ketchup Shrimp
This is one of the Woo family favorite dish. Sriracha Ketchup shrimp. Every Sunday when we drove to Chinatown, my grandma would make this delicious finger licking tasty shrimp. We loved it especially the sauce as gravy added on top of a bowl of rice.
It so simple to make. You need shrimp, I would get size 16-20 which if you didn't know, 16 to 20 shrimp make up a pound. The higher the number the smaller the shrimp. The idea that shrimp is advertised as extra large or jumbo is ridiculous.
1 stalk of scallion. The purpose is to give the dish some color and additional flavor. Ketchup is the base sauce, worchestershire and some shao shing wine, Sriracha sauce and a slurry solution (corn starch mixed with water and mixed together is a slurry. Fresh clove of garlic smashed. Fresh ginger cut in slivers. A little gnger flavor, garlic flavor and scallion flavor . Oil is needed first to cook the garlic and ginger and scallion. Dice the scallion or cut length wise about 2-3 inches.
In a separate bowl, add ketchup, shao shing wine, worchestershire sauce, water and a slurry solution all together.
Heat pan on medium for non stick. play it safe, add oil, add garlic and ginger, stir with a wooden spoon, add scallion, then add shrimp and stir fry until all shrimp turns orange color. Take one out and test texture. It should not be mushy, you cooked too long, then add sauce and mix thoroughly. The sauce will thicken as you stir fry.
No need to show pictures of the final dish.
Now do you feel that you created a dish based on your taste. Add more garlic or add more ginger if you want.
No time limit, did you enjoy and most important I'm sure it taste delicious.
Lastly, always taste your dish. This will tell you if you want to add more or less.

Milennial Steamed Garlic Ginger Tilapia
Steaming retains flavor and where it benefits a dish is with steaming fish. Now the traditional way of steaming fish is to steam the whole fish. Well, as you can imagine, its a lot of work and time.
Buying fresh live fish happened to me once while I was in Philadelphia with my wife. There were tanks of fresh live Tilapia and it would be so interesting the purchase a live one. As Americans, our seafood is fillet with out the head and no bones. But did you know that the bones do add more flavor through the collagen in the bones? Yep buying a whole cleaned fish is so much better, but coming back to reality who has the time to clean a fish.
I as Chef Woo Can doesn't have the time.
So, I purchased a pound of Tilapia fillet the ingredients used for this dish is lite soy sauce, fresh garlic cloves, fresh ginger slices, shredded scallion and a bunch of cilantro and white pepper.
Wash the cilantro, shred the scallion, smash the garlic and slice the ginger.
Fuse the garlic and ginger by adding oil to a small pot, then add garlic and ginger on low setting. The oils from the garlic and ginger will infuse into the oil. In a steamer, add the Tilapia and steam the fish until it turns an opaque color. Add some lite soy sauce, sprinkle the shredded scallion all over the fish as well as fresh cilantro.
The oil is ready to pour over the fish, so turn the heat on high, make sure the garlic doesn't brown or burn. The reason the high temperature is done when its poured over the fish you'll hear and see the sizzling sensation.
If you want to be more creative, add a dash of sesame oil over the fish. Take a piece of fish with a little cilantro and scallion dipped in the soy sauce infused oil on a bowl of rice, soooo delicious.
By the way, after the Tilapia is done, you'll see a lot of fish juices, you can empty some out.
Here you go again, you just created a wonderful seafood dish.
