Your ready to make a Bok Choy veggie dish. A simple dish, so you go to your local supermarket and in the vegetable section is huge Bok Choy, you touch it and its kind of wimpy. or it looks old and the leaves look a little yellow. 99% of the time most Asian vegetables just sit around. The demand isn't there or people just don't know how to prepare it.
BUT in the Asian supermarket, Bok Choy is a favorite amongst Asian families and the turnover is high, therefore the vegetables are always fresh.
